I picked a recipe to try this week. I changed it a little bit to make it even easier (aka laaaaaaaaazy). It was delish!!!!!!!!!!!! Drew and I loved it.
Slow Cooked Pork Cacciatore
1 lb. pork chops, cubed
1 can (14.5 oz) diced tomatoes, undrained
1 can (6 oz) tomato paste
2 bell peppers, diced
1 cup mushrooms, sliced
1/2 onion, diced
1 tsp oregano
salt & pepper
Mix everything, except the pasta and parmesan cheese, in a crockpot. Cook on low for 4 hours. Serve over your choice of pasta --- I used egg noodles. Sprinkle parmesan cheese on top.

I skipped the thickening of the sauce and mine came out just fine.
